  • 1¼ cups (1 cup and a quarter of a cup) all-purpose wholemeal flour
  • 1 tbsp (tablespoon) of baking powder
  • ¼ tsp (quarter of a teaspoon) of salt
  • 1 tbsp (tablespoon) of white sugar
  • 1 cup of milk
  • 2 tbsp's (tablespoons) of canola/rapeseed oil
  • 2 eggs

 Gluten Free Ingredients:
  • 1½ cups of rice flour (1 cup and half of a cup)
  • ¼ cup quinoa flour (quarter of a cup)
  • 1 tbsp (tablespoon) of baking powder
  • ¼ tsp (quarter of a teaspoon) of xantham gum
  • 2 tbsp's (2 tablespoons) of white sugar
  • 1¼ (1 and 1 quarter of a cup) of milk (you should try soy or almond milk!)
  • 2 eggs
  • 3 tbsp (3 tablespoons) of canola/rapeseed oil
  • ¼ tsp (quarter of a teaspoon) of salt

 Instructions:

1) Wash hands before you do anything! Then in one bowl, mix together all your wet ingredients (ingredients with no dry texture).

2) In the other bowl, sift together all your dry ingredients.

3) Make a well (round hole with no food in it) in the center of the dry mix and pour in your wet mix.

4) Mix well.

5) Separate the pancake mixture evenly into 6 small bowls (around ½ a cup each)

6) Dye each bowl in one of the colors of the rainbow (red, orange, yellow, green, blue and purple).

7) Heat a lightly oiled pan or griddle over medium high heat.

8) Pour or scoop the batter (the pancake mixture) onto the griddle or frying pan, using approximately a ¼ of a cup for each pancake. Brown on both sides (cook the pancakes until they have a brown color on both sides of it), and set aside.

9) Choose one fruit for each of the color of the rainbow (red, orange, yellow, green, blue and purple).

10) Cut the fruit into one inch cubes (2.54 cm cubes approx.)

11) String one fruit from each color onto the skewer in rainbow order.

12) Stack cooked pancakes into rainbow order and insert 6 fruit skewers into the pancakes creating a rainbow shape. :)
